Crunchy Vanilla Protein Bars Recipe

These crunchy vanilla protein bars pack roughly 17 grams of protein per serving, (depending on the collagen) plus fiber and healthy fats, making them a perfect, balanced breakfast on the go.


Protein Bars

Ingredients

- 1/2 cup flaked coconut

- 2 tablespoons raw cacao nibs

- 1 1/2 cups almond flour

- 1 cup collagen powder

- 2 tablespoons ground or whole chia seeds

- 1 teaspoon vanilla powder or 1 tablespoon unsweetened vanilla extract

- 1/4 cup virgin coconut oil

- 1/2 cup coconut milk

- 1 1/2 teaspoons fresh lemon zest

- 1/3 cup macadamia nuts, halved

- Optional: low-carb sweetener, to taste




Preparation

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease or line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.

  2. Combine Dry Ingredients: In a large mixing bowl, combine flaked coconut, raw cacao nibs, almond flour, collagen powder, and ground chia seeds. Stir until evenly mixed.

  3. Add Vanilla Flavor: Sprinkle vanilla powder or pour unsweetened vanilla extract over the dry ingredients. Mix well to distribute the vanilla flavor throughout the mixture.

  4. Melt Coconut Oil: In a small saucepan over low heat, melt virgin coconut oil until it becomes liquid.

  5. Combine Wet Ingredients: Pour melted coconut oil and coconut milk into the dry ingredients mixture. Add fresh lemon zest as well. Stir until all ingredients are thoroughly combined. If desired, add low-carb sweetener to taste.

  6. Fold in Macadamia Nuts: Gently fold halved macadamia nuts into the mixture, distributing them evenly.

  7. Press into Pan: Transfer the mixture to the prepared baking dish. Use a spatula or your hands to press it firmly and evenly into the dish.

  8. Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the edges are golden brown and the top is firm to the touch.

  9. Cool and Slice: Allow the protein bars to cool completely in the baking dish. Once cooled, use the parchment paper overhang to lift the bars out of the dish. Place them on a cutting board and slice into individual bars or squares.


  10. Enjoy: These crunchy vanilla protein bars are perfect for a balanced breakfast on the go or as a nutritious snack any time of the day. Store any leftovers in an airtight container at room temperature or in the refrigerator for up to one week.
